Chef’s Table Experience

The Hill Bistro | Modern American Cuisine & Cocktails

A front-row seat to the kitchen: seasonal tasting menu, cocktail pairings, and stories behind every plate.

What Makes Our Chef’s Table Special

Sit at the edge of the pass and watch courses come to life—sizzling pans, last-minute garnishes, and the calm choreography of service. The menu changes every few weeks, drawing on Mid-Atlantic farms, day-boat seafood, and classic techniques with modern accents.

Cocktail & Zero-Proof Pairings

Our bar team pairs each course with a petite pour: bright spritzers for crudo, oak-kissed sippers for roasts, and garden-driven cordials for dessert. A fully zero-proof track mirrors the experience with house sodas, infusions, and teas.

  • Heritage Spritz — blanc vermouth, green strawberry, soda.
  • Smoked Boulevardier — rye, bitter orange, ember rinse.
  • Garden Cooler (0%) — cucumber, yuzu, dill tonic.
